It is available as young turkey weighing between 8-40 pounds (3.7-18.2 kgs.), and as mature turkey which is usually mechanically deboned for use in frankfurters and other processed products.
U.S. whole turkey is also available fresh or frozen, in smaller sizes, bone-in or boneless, with or without giblets and neck, seasoned or self-basted.
U.S. Grade A whole turkeys have a normal shape, are fully fleshed and meaty, are free of disjointed or broken bones and have no missing parts. The skin is free of blood clots, bruises and other discolorations. Boneless whole turkeys are free of bone, cartilage and tendons. Frozen turkeys are free of freezing defects, such as dehydration or excess moisture.
