Ingredients:
8 U.S. chicken drumsticks
1 tbsp. sun-dried tomato, pureed
1 tsp. coriander seeds
1 tsp. cumin seeds
1 tsp. peppercorn
1 tsp. chili powder
Olive oil to drizzle
Quinoa salad to serve
Method of preparation:
Stir coriander with cumin and peppercorn in a heavy pan for 2 minutes or until fragrant. Crush mixture to a powder. Add oil, tomato puree, chili and salt. Mix well. Rub U.S. chicken drumsticks with spice paste. Grill over hot coals for 5-6 minutes to each side, or until cooked through to desired doneness.
