Ingredients:

4-5kg   whole U.S. turkey, giblets removed and rinsed
1   cup turkey stock, made from giblets
2   carrots, chopped
2   stalks celery, chopped
2   onions, chopped
1   tsp. dried thyme
Salt and pepper to taste


Method of preparation:

Rub U.S. Turkey with salt and pepper. Place in a large lightly-greased roasting pan. Let stand for 15 minutes. Mix carrot with celery, onion and thyme. Stuff half the mixture inside turkey’s cavity and thread to secure. Spoon remaining mixture around turkey. Drizzle with stock. Cover with lightly buttered foil. Roast at preheated to 350°F for 2 ½ - 3 hours or until turkey is brown and cooked through to desired doneness. Set aside for 10 minutes before carving.
