Ingredients:
1 ½ cups asparagus, cooked and chopped
1 cup U.S. liquid eggs
1 cup mushrooms, sliced
1 cup skim milk
1 cup chicken breast, cooked and shredded
¼ cup red sweet pepper, chopped
2 muffins, torn into pieces
3 tbsps. orange cheddar cheese, shredded
1 tbsp. vegetable oil
1 tbsp. unsalted butter
Salt and pepper to taste
Method of Preparation:
In a large non-stick skillet, heat oil over medium heat. Add asparagus, mushrooms and sweet pepper. Cook and stir for 3 minutes until just tender. Brush a casserole dish with butter. Place muffin in the casserole. Top with chicken, asparagus mixture and cheese. Beat well U.S. liquid eggs with milk, salt and pepper. Pour over strata mixture in casserole. Bake for 25 minutes or until knife inserted in the middle comes out clean. Let stand for 10 minutes. Serve.
