Ingredients:
4 U.S. chicken leg quarters
2 cups mushrooms, sliced
1 cup shallots
1 cup apple juice
½ cup chicken stock
¼ cup dried cherries
1 tbsp. flour
1 tbsp. parsley, chopped
1 tsp. garlic, minced
1 tsp. coriander, chopped
½ tsp. pepper
Salt to taste
Method of preparation:
Stir U.S. chicken leg quarters in a greased skillet until brown. Season with salt and pepper. Transfer to a roasting pan and cook at 350 °F for 55 minutes or until cooked through. In same skillet, cook mushrooms, onions and garlic, over medium heat, for 2 minutes. Sprinkle flour and stir until light brown. Add apple juice, stock and stir for 30 seconds. Add cherries, parsley and coriander. Cook for 2 minutes and remove from heat. Serve vegetables with roasted leg quarters.
